Colombia: Celestina Chiroso
Colombia: Celestina Chiroso
Light
Celestina is the name given to this heavenly coffee by the processing mill located in Huila, Colombia. It is a delight of delicate flowers, light and sweet oranges, and makes an incredibly clean cup. Chiroso is a varietal associated with Ethiopian heirlooms and shows bright floral and punchy fruit notes seen in African coffees. The mill uses an extended fermentation process, fermenting the washed coffee for 72 hours instead of 24-48, to preserve the softer, subtler notes of this coffee without destroying its clarity. We love its honeysuckle fragrance and mandarin orange juiciness, which combine for a complex cup full of character.
